Cheese Enchilada Recipe

The sauce doesn't need to be boiling hot, just hot enough to soften the tortillas.

Next, dip one tortilla in the sauce until covered by the sauce. I get the tortilla as far in the sauce as I can with out letting go. Leave in the sauce for between 10 and 20 seconds. The hotter the sauce less time needed to soften the tortillas.

Lay the soften tortilla on your work surface.

Add your cheese, onion, olives, and green chilis. You be the judge on how much of each ingredient goes in each enchilada. Just remember that you still have to roll the tortilla with out breaking it, so I always put a little less than what I think is enough.

Once you have your cheese and other ingredients in place, carefully roll your tortilla over being careful not to break the tortilla. Sometimes it's hard to avoid, just go slow and be aware of the flexibility of the tortilla.

Lay your rolled tortilla in your baking dish. I used a 7X11 Pyrex baking dish.

Continue this process until you have filled your baking dish. You will end up with at least one enchilada on the side. You can try to squeeze a second one on the side, but I have never had luck getting a second one to fit.

Spoon the warmed enchilada sauce over the prepared enchiladas. You most likely won't need all of the enchilada sauce for this step. I only used about 1 1/2 cups and reserved the rest for a later time. FYI enchilada sauce freezes quite well.

Last step before going in the oven.

Sprinkle the rest of the cheese, onion, olives, and green chili's on top.

Cover with aluminum foil and place in the preheated oven on the middle rack.

Cook for 20 minutes, remove foil, cook uncovered for another 10 minutes.

Serve with Spanish rice and re-fried beans.

I also like a dollop of sour cream on mine.
